Do you make your own salad? I seldom do because I need to prepare a lot of things before I get to eat a simple meal. For a lazy person (like me), I went to research on simple recipes and modified to my own liking and aim to keep it as simple as possible.
Previously, I was really quite bored with the #eatcleanday that I had.
After I was injured, I stopped all activities and hence, I need to watch my diet even more. But is the festive season, who cares about it? So I binge and binge. Eating awesome meals and tons of chocolate! Recently, after a serious heavy Korean BBQ buffet with lots of meats, I developed an unusual craving for salads. Only want to eat salad wherever I go. But salad is really really damm expensive (exclaiming despite knowing the cold hard truth for a long time)!
Hence, I went to dig and research for salads recipes (because I am not creative). Here’s a compilation of the salads I did for the past week. In the actual recipes, there are lots more ingredients to be included but because I am so lazy, I choose the things that are easy to find, simple to make. Less preparation time needed.
If you are very skillful with knife, I am sure everything can be done within 15 mins. I took less than 30 mins for everything, because I was really really careful with my knife.
For dressings, I kept it very simple. No pre-made salad dressings. I only used Greek Yogurt, White Wine Vinegar and/or Cream Cheese for now.
I bought two kinds of cheese. But decided to use this cream cheese for now (it is very hard to keep once you open). Taste really good, but cream cheese isn’t a healthy choice. High in fats, low in protein and calcium. You should avoid cream cheese at all cost. Switch to cottage cheese for a healthier choice. (I was attracted by the word “garlic”, so thought of buying it to try. ) A reminder to moderate your cheese intake too ( I took up cheese because I needed the extra calcium).

Fresh Tomato Salad (serves dinner)
Ingredients:
1 tomato
1/2 cucumber
1/2 capsicum
1 red onion
2 garlic cloves
Direction: Dice everything, mix and toss with white wine vinegar, pepper and cheese.

Mediterranean Potato Salad (serves 2, dinner and breakfast for the next day)
Ingredients:
3 baby potatoes
1/2 cucumber
1/2 capsicum
1 red onion
Direction: Boil and cook the potato. Dice everything. Mix and toss with cheese and yogurt.

Avocado Corn Salad (serves lunch)
Ingredients:
2 small butter head lettuce
1 avocado
1 tomato
3 small strawberries (additional because I bought Korea strawberries!)
3 spoonful of canned corn
Direction: Cut everything. Mix. Toss with cheese and yogurt.

Tuna Avocado Salad (serves breakfast and pair with lunch)
Ingredients:
1 Avocado
1/2 cucumber
1 tomato
1 tuna (canned in mineral water)
1 red onion
Direction: Cut, cut, cut. Mix. No dressing required.
